Jaggery, known as gur in many Indian homes, is a staple ingredient used in sweets, drinks and even traditional home remedies. Made from sugarcane or palm sap, this natural sweetener has been part of everyday cooking for generations. But when temperatures rise in summer, many people start wondering whether jaggery can spoil because of heat and humidity.

The good news is that jaggery can easily be stored during summer. The key is simply storing it the right way so it stays fresh and safe to use.

One of the most effective methods is keeping jaggery in an airtight container. Containers made of glass or stainless steel are often preferred because they help keep out moisture and insects. Experts suggest placing the container in a cool and dry spot in the kitchen, away from direct sunlight or heat from cooking areas like the stove.

In places where the weather becomes extremely humid, some people also choose to store jaggery in the refrigerator. Wrapping the jaggery in paper or cloth before placing it in a container can help reduce moisture buildup, which is one of the main reasons it may spoil.

Another useful tip is to break large blocks of jaggery into smaller pieces before storing them. Large chunks can sometimes trap moisture inside, while smaller pieces remain drier and are easier to use when cooking. It is also important to handle jaggery carefully—always use dry hands or a dry spoon. Even a small amount of water can encourage mould to develop.

When stored properly, jaggery can last for quite a long time. In most cases, it can stay fresh for six months to a year at room temperature, as long as it remains sealed and dry. Keeping it in the refrigerator can help extend its shelf life even further.

Before using stored jaggery, it’s always a good idea to check for signs of spoilage. A strange smell, visible mould or a sticky, slimy texture may indicate that it is no longer safe to eat. However, slight hardening is completely normal and does not mean the jaggery has gone bad.

Many people also wonder if eating jaggery in summer is safe. In moderate amounts, it usually is. Jaggery can provide quick energy and contains small amounts of minerals such as iron. However, traditional diets often consider jaggery a “warming” food, so eating too much during very hot weather may cause discomfort for some people.

For this reason, it is often consumed in small portions or paired with cooling foods like buttermilk or fennel seeds after meals.

In simple terms, jaggery doesn’t need to disappear from your kitchen during summer. With proper storage—keeping it dry, sealed and away from heat—you can enjoy it throughout the season without worrying about spoilage.
