The Wellness of Haryana’s Rotis

Haryanvi households pride themselves on serving fresh, homemade rotis accompanied by seasonal ingredients like chutneys made of garlic or mint and sides of curd or buttermilk. The region’s traditional slow-cooking methods ensure that the natural goodness of the grains is preserved, making each meal a perfect blend of health and taste. For travellers, indulging in these rotis at local dhabas along highways offers an authentic culinary experience supporting mindful eating.

Nestled in northern India, the state is a treasure trove of lush green landscapes, historic monuments, and culinary delights centred on hearty, nutritious rotis.

Bajra roti (pearl millet bread): Bajra is rich in fibre, iron, and essential nutrients, making it a powerhouse of nutrients. The superfood is known for its high fibre content, which aids digestion and keeps cholesterol levels in check. The local also makes Bajra aloo rotis as a variation.

Makki roti (cornbread)-Equally popular is the Makki roti, typically paired with saag (leafy greens), providing a wholesome balance of essential vitamins and minerals.

Gochini atta roti:  Gochini flour is blended with wheat flour to make this roti, it has a distinct taste that sets it apart from traditional wheat rotis.

Besan masala roti: This roti is made with a dough of besan and wheat flour and is spiced with herbs like cumin powder, green chilli powder, amchur, red chilli powder, coriander and ghee. The flatbread goes really well with curries and yoghurt.

Bathua Aloo parathas:  Bathua leaves (pigweed), is a winter vegetable that has multiple health benefits. The leaves of the bathua are boiled and mixed with mashed potato, and spices and stuffed in wheat flour dough. The stuffed roti is topped with homemade butter and aachar.

Wheat-based rotis– From usual chapatis to tandoori rotis, this wheat flour-based flatbread is made by slapping the dough between hands during the preparation.  Often served with fresh butter or ghee, these staples offer energy and satiety, making them ideal for active lifestyles. These rotis are not just meals; they represent wellness, with every bite offering nourishment and vitality.

Gur Roti or meethi roti- This grandmother’s sweet and savoury dish is still a favourite among all. Jaggery is mixed wheat flour with a pinch of saunf (fennel seeds) and made into a dough. The flatbread is roasted on a tawa or griddle using a good amount of desi ghee. The Haryanavi also make a dessert called Bhura roti.it is made with left over rotis mixing it with bhura (powdered sugar) and ghee.
